For the Crust:
- 1 pre-made or homemade pie crust
For the Filling:
- 2 cups purple sweet potato, cooked and mashed
- 1 cup evaporated milk
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 2 tbsp butter, melted
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- Pinch of salt
For Garnish (Optional):
- Whipped cream
- Toasted coconut or chopped pecans
Instructions
- Prepare Crust: Preheat oven to 350°F (175°C). Roll out pie crust into a pie dish and set aside.
- Make Filling: Blend mashed sweet potato, evaporated milk, sugars, eggs, melted butter, vanilla, cinnamon, nutmeg, and salt until smooth.
- Assemble & Bake: Pour filling into crust and bake for 50–60 minutes until set. Cool completely.
- Serve: Garnish with whipped cream and enjoy this colorful dessert!
