Ingredients
For the Chicken:
- 2 large boneless, skinless chicken breasts (cut in half lengthwise to make 4 thinner cutlets)
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- 2 tablespoons olive oil
For the Creamy Sauce:
- 2 tablespoons butter
- 8 ounces mushrooms (sliced – cremini or white mushrooms)
- 3 cloves garlic (minced)
- ½ teaspoon Italian seasoning
- ½ cup chicken broth
- ½ cup heavy cream
- ¼ cup Parmesan cheese (optional)
- 2 cups fresh spinach (chopped)
- ½ teaspoon red pepper flakes (optional)
For Garnishing (Optional):
- Fresh parsley (chopped)
- Extra Parmesan cheese
Instructions
1. Prepare the Chicken:
Season chicken breasts with salt, black pepper, and paprika. Heat olive oil in a large skillet over medium-high heat.
- Sear the chicken for 4-5 minutes per side, until golden brown and cooked through.
- Remove the chicken from the skillet and set aside on a plate.
2. Sauté the Mushrooms:
In the same skillet, melt butter and add sliced mushrooms.
- Cook for 4-5 minutes, stirring occasionally, until they become golden brown and tender.
- Stir in garlic and Italian seasoning, cooking for 1 minute until fragrant.
3. Make the Creamy Sauce:
Pour in chicken broth and let it simmer for 3-4 minutes to reduce slightly.
- Stir in heavy cream and Parmesan cheese (if using).
- Add red pepper flakes for a little heat (optional).
4. Add Spinach & Return Chicken:
Add chopped spinach and stir until wilted (about 1 minute).
- Return the cooked chicken to the skillet and spoon the creamy sauce over it.
- Let everything simmer for 2-3 minutes to blend flavors.
5. Serve & Enjoy:
Garnish with fresh parsley and extra Parmesan cheese, then serve with rice, pasta, or a side of roasted veggies.
Notes
- Use Thin Chicken Cutlets – They cook faster and absorb the sauce better.
- Don’t Overcook the Spinach – Add it at the end to keep it fresh and vibrant.
- Want It Lighter? – Swap heavy cream for half-and-half or coconut milk.
- Add More Protein – Stir in cooked shrimp or bacon for extra richness.
- Thicker Sauce? – Stir in 1 teaspoon cornstarch mixed with 1 tablespoon water before adding the spinach.
