Instructions

1. Prepare the Chicken:

Season chicken breasts with salt, black pepper, and paprika. Heat olive oil in a large skillet over medium-high heat.

  • Sear the chicken for 4-5 minutes per side, until golden brown and cooked through.
  • Remove the chicken from the skillet and set aside on a plate.

2. Sauté the Mushrooms:

In the same skillet, melt butter and add sliced mushrooms.

  • Cook for 4-5 minutes, stirring occasionally, until they become golden brown and tender.
  • Stir in garlic and Italian seasoning, cooking for 1 minute until fragrant.

3. Make the Creamy Sauce:

Pour in chicken broth and let it simmer for 3-4 minutes to reduce slightly.

  • Stir in heavy cream and Parmesan cheese (if using).
  • Add red pepper flakes for a little heat (optional).

4. Add Spinach & Return Chicken:

Add chopped spinach and stir until wilted (about 1 minute).

  • Return the cooked chicken to the skillet and spoon the creamy sauce over it.
  • Let everything simmer for 2-3 minutes to blend flavors.

5. Serve & Enjoy:
