Instructions

  1. Preheat the Oven:
    Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with olive oil.

  2. Season and Sear the Chicken:
    Season the chicken breasts with salt, pepper, and paprika. Heat olive oil in a skillet over medium-high heat and sear the chicken for 2-3 minutes per side until golden brown. Remove and place in the baking dish.

  3. Sauté the Mushrooms:
    In the same skillet, melt butter and add sliced mushrooms. Cook for 4-5 minutes until softened, then add garlic and thyme, stirring for 1 minute until fragrant.

  4. Prepare the Sauce:
    Pour in chicken broth and let it simmer for 3-4 minutes to reduce. Stir in heavy cream and Parmesan cheese (if using) and let the sauce thicken for 2 minutes.

  5. Bake the Chicken:
    Pour the mushroom sauce over the chicken breasts in the baking dish. Bake uncovered for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
